Currying On

Life is hard. I took a bit of a break from my cooking challenge, but before I did I made Baingan Bharta aka Grilled Eggplant Curry from Tea for Tumeric (https://www.teaforturmeric.com/baingan-bharta/). I'll be honest, I forget most of the story of making this dish because it made it nearly two weeks ago but I seriously enjoyed it. Even Ben aka Mr Play-It-Safe with food really enjoyed this one. I did get a little nervous about consistency, but it turned out just fine and was quite filling. With just a few slices of naan, this kept us totally satisfied for dinner. It even made a better lunch after the flavours got to settle with each other overnight.

So onward we go with our culinary trip around the world and reminding myself cooking is cheaper than therapy.
